      <image:caption>1 C. Grain-Free Flour Tortilla Flour Mix 1 egg 1 tsp vanilla extract 1 tsp monk fruit (or stevia or sugar if you like) 1/2 Tbl Cinnamon  1/2 C water Mix all the above. The dough will be sticky and reminiscent of play dough. We made golf ball size dough balls and rolled them into tube shapes with flat ends. Using a knife, we pressed lines into dough to make the churro appearance. Make a bowl of 1/2 c coconut sugar and 1/4 cinnamon (or stevia or sugar, you pick:) Set asideHeat skillet with coconut oil to medium-high. Cook the dough in the oil for about 2 min on each side. Use tongs to rotate until each side is cooked and crisp! As you take each churro out of the skillet, toss it into the bowl with cinnamon and sugar. Roll it around until it is well coated then set on a plate to cool slightly. Repeat this for all churros. Serve warm.</image:caption>

      <image:caption>For these Taquitos we used shredded chicken and cheese. Whatever filling you choose, prepare it ahead of time and set it aside.  Mix up a batch of our grain-free flour tortilla blend. Press into soft taco size tortillas. Cook according to package instructions. Allow to cool slightly.  Warm oil of choice in a skillet to medium-high. Place a small amount of filling along the side of the tortilla. Roll it and place it seam side down in the oil. Repeat this until all tortillas are filled and rolled. After about a minute of cooking on the seam side, use tongs to turn the taquito to cook on the other side. It is done cooking once all sides are crispy and brown in color. Remove from pan and place on paper towel. Baked Option - Place rolled taquitos seam side down on parchment paper on a sheet pan. Spray lightly with oil. Bake on 400 degrees for 10-15 min turning the taquitos half way through the cook time and back again for the last 5 minutes.  Air Fryer Option -  Follow same instructions as for baking but place on air fryer pan. Spray with oil and cook according to your air fryer time recommendations.</image:caption>

Using a rolling pin, roll out a baseball size dough ball into a large tortilla. Warm skillet with oil of choice to medium-high heat and cook according to package instructions.  We went with a basic (and delicious) cheese filling for this one. Quesadillas are so versatile, the sky is the limit. Just warm a skillet to medium heat, place tortilla flat into the pan, layer your filling ingredients onto one side, and flip the other side on top like a lid. Cook for 2-3 minutes. One final flip, another 2 minutes (longer for a crunchy bite) and enter quesadilla heaven!</image:caption>

Using a pizza cutter or knife, cut into chip shapes. Cut all dough before next steps. Warm oil in a skilet on medium high. We recommend Avocado Oil for flavor! Gently place dough into oil. Allow to sizzle about 15 seconds then turn over with tongs or spatula. Once browned and crisp on both sides, remove from oil and place on paper towel. Baked Option - Pre-Heat Oven to 350 degrees. Place chips on a sheet pan and parchment paper. Spray lightly with avocado or olive oil spray. Bake for 15-20 min turning with tongs halfway through cooking time. For these sweet babes we cooked peaches in a skillet with coconut oil and cinnamon but peaches aren’t the only option! Cherries and apples would be just a good!  Whatever you choose for a filling, simply put a small spoonful of it onto the side of the tortilla and roll like a burrito, tucking in the ends. Warm skillet and coconut oil to medium high heat. Place pie seam side down on to skillet and cook for approx 1 min. Using tongs, Turn the pie over and cook the other side for another minute. Rotate one last time onto the seam side for an extra-crisp crust. Serve with whipped topping or ice cream. Baking option - Place pies seam side down on parchment paper-lined baking sheet. Pre-heat oven to 375 degrees. Spray with coconut oil. Bake for 15-20 min until the dough is at desired crispness. You can also finish them up in an air fryer for that fresh fried crust!</image:caption>

We stuffed these crispy shells with chicken, sautéed mushrooms, and arugula, and WOW! But you can do what you want. Simply decide what you will fill your shells with and have them close by. Warm an oiled skillet to medium-high heat. Lay your cooked tortilla on the skillet (you might be able to squeeze 3 of them at the same time depending on the size of your pan) Once they are sizzling (about 45 seconds) turn them using tongs. Now comes the fun part! Place your taco filling on one side of the tortilla then flip the other side over so it looks like a shell. Let that cook for about 1 min then use your tongs to flip it to the other side so it can get crispy too! Repeat for all tortillas!</image:caption>

Using a rolling pin, roll out the dough to the thickness you would like your crackers to be. Cut into cracker shapes (we used a cookie cutter, which was fun and worked great!) Pre-Heat oven to 350 degrees. Lightly spray a baking sheet to keep the crackers from sticking. Add all your cute shapes onto the sheet pan. Bake for 15-20 min until lightly brown. Turn them over once mid-way through the cooking time. Remove from oven and allow to cool. Good luck keeping these in your house for long. :)</image:caption>
